Zucchini (Kaddu) Curry

Ingredients

  • 2 tablespoons oil
  • 2 teaspoons fenugreek (methi) seeds
  • 5 garlic cloves, finely chopped
  • 1 onion, finely chopped
  • 3 green chilies, slit
  • 2-inch piece ginger, grated
  • 2 tomatoes, chopped
  • Salt, to taste
  • 1 teaspoon turmeric powder
  • 2 teaspoons paprika
  • 1 teaspoon garam masala
  • Zucchini (kaddu), peeled and chopped
  • Fresh coriander, for garnish

Method

  1. Heat oil in a pan and add methi (fenugreek) seeds. Allow them to crackle.
  2. Add chopped garlic and sauté until aromatic.
  3. Stir in onions, ginger, and green chilies. Cook until the onions turn soft and translucent.
  4. Add tomatoes, turmeric, paprika, and salt. Sprinkle a little water to prevent sticking and cook until tomatoes soften.
  5. Add chopped zucchini and mix well. Cover and simmer on low heat for about 20 minutes until tender.
  6. Finish by sprinkling garam masala and fresh coriander on top. Serve warm.
