Zucchini (Kaddu) Curry

Ingredients
- 2 tablespoons oil
- 2 teaspoons fenugreek (methi) seeds
- 5 garlic cloves, finely chopped
- 1 onion, finely chopped
- 3 green chilies, slit
- 2-inch piece ginger, grated
- 2 tomatoes, chopped
- Salt, to taste
- 1 teaspoon turmeric powder
- 2 teaspoons paprika
- 1 teaspoon garam masala
- Zucchini (kaddu), peeled and chopped
- Fresh coriander, for garnish
Method
- Heat oil in a pan and add methi (fenugreek) seeds. Allow them to crackle.
- Add chopped garlic and sauté until aromatic.
- Stir in onions, ginger, and green chilies. Cook until the onions turn soft and translucent.
- Add tomatoes, turmeric, paprika, and salt. Sprinkle a little water to prevent sticking and cook until tomatoes soften.
- Add chopped zucchini and mix well. Cover and simmer on low heat for about 20 minutes until tender.
- Finish by sprinkling garam masala and fresh coriander on top. Serve warm.
