Besan Chilla (Savory Gram Flour Pancake)

Besan Chilla is a simple recipe that you can prepare anytime. It is a very healthy tiffin option.

Ingredients

  • 1½ cups gram flour (besan)
  • ½ teaspoon turmeric powder
  • 1 teaspoon Kashmiri red chili powder
  • 1 teaspoon salt
  • ½ teaspoon asafoetida (hing)
  • 1 teaspoon carom seeds (ajwain)
  • 1 teaspoon dried fenugreek leaves (kasoori methi)

Vegetables

  • 1 onion, finely chopped
  • 1 small piece of ginger, finely chopped
  • 1 green chili, finely chopped
  • 1 small carrot, grated
  • 1 small piece of capsicum, finely chopped
  • 1 medium tomato, finely chopped
  • Fresh coriander leaves, chopped

Method

  1. In a large bowl, add gram flour along with turmeric, red chili powder, salt, hing, ajwain, and kasoori methi.
  2. Add all the chopped vegetables and mix well. You can also add any other vegetables of your choice.
  3. Add ½ cup water and mix well. Then add another ½ cup water and mix to form a smooth batter.
  4. The batter should not be too thick; it should have a pourable consistency.
  5. Taste and adjust salt or spices if needed.

Cooking

  1. Heat a pan (tawa) on low heat and pour a ladle of batter onto it. Spread it evenly to medium thickness.
  2. Increase heat to medium and let it cook.
  3. Drizzle a little oil around the edges and allow it to cook slowly.
  4. Add a little oil on top before flipping.
  5. Flip the chilla, press gently, and cook for about 2 minutes on the other side.
  6. Once cooked on both sides, remove from the pan and serve hot.

Cooking

Serve the chilla with spicy tomato chutney and mint chutney.

Notes

  1. This is a vegetarian alternative to an omelette.
  2. It is rich in protein and fiber.
