Fresh Chickpea Salad Bowl (Preparation Time: 35 minutes)

Salad

Ingredients (Only 5!)
- ½ head lettuce, chopped
- 1 tin chickpeas (240 g), drained and rinsed
- ½ cucumber, diced
- 1 tomato, chopped
- 1 small onion, thinly sliced
- 5 radishes, chopped (or substitute with mooli)
- 2 teaspoons vinegar
Dressing
- 1 tablespoon olive oil
- 2 tablespoons lemon juice (fresh or bottled)
- Salt and black pepper, to taste
Instructions
- Place the sliced onions in a small bowl and mix with vinegar. Let them sit for about 15 minutes to soften their sharpness.
- In a large salad bowl, combine lettuce, chickpeas, cucumber, tomato, and radishes.
- Add the vinegar-soaked onions to the vegetables.
- In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently until well combined.
- Serve fresh and enjoy.
