Fresh Chickpea Salad Bowl

Ingredients (Only 5!)

  • ½ head lettuce, chopped
  • 1 tin chickpeas (240 g), drained and rinsed
  • ½ cucumber, diced
  • 1 tomato, chopped
  • 1 small onion, thinly sliced
  • 5 radishes, chopped (or substitute with mooli)
  • 2 teaspoons vinegar

Dressing

  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice (fresh or bottled)
  • Salt and black pepper, to taste

Instructions

  1. Place the sliced onions in a small bowl and mix with vinegar. Let them sit for about 15 minutes to soften their sharpness.
  2. In a large salad bowl, combine lettuce, chickpeas, cucumber, tomato, and radishes.
  3. Add the vinegar-soaked onions to the vegetables.
  4. In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the salad and toss gently until well combined.
  6. Serve fresh and enjoy.
